Coffee Cupping: Introductory Course

Being able to taste is an essential skill for any Barista and Cupping is your ticket to that skill. Cupping is a standardised practice of tasting coffee used throughout the coffee industry. In this class, participants will learn the process of cupping, what to look for when assessing coffee and how to dissect the Coffee Tasters Wheel.  Let's kickstart some sensory training!

 

Modern Home Brewing Workshop

You don't have to be a formally trained barista to make excellent coffee at home (though it helps)! In this workshop, participants will learn the necessary skills & equipment needed to bring out the best in their home coffees.

 

Modern Espresso & Extraction

What is a refractometer, & how does it measure extraction percentages in coffee? More importantly, how does extraction percentage correlate with flavour? These are a couple topics we'll cover as we discuss recent developments in espresso.

 

Barista Crash Course - From Bean to Cup!

Learn the rudiments of barista skills - from espresso extraction, to milk steaming, to efficient workflow - this class provides clear first steps for the budding barista.

Hearts, tulips; rosettas - these are the signs of well-steamed milk poured by a skilled barista. Whether you're just starting out or just want some fine-tuning, this workshop is a great way to build milk skills!

SCAE Coffee Diploma Courses


Introduction to Coffee

Overview designed to introduce the novice to the world of speciality coffee.

 

Barista Skills Foundation

Designed to introduce core barista skills to people with no previous barista experience. Successful candidates should be able to simply calibrate their grinders & make an espresso & cappuccino to core standards.

 

Barista Skills Intermediate

Designed to test key core & more advanced skills & understanding, expected from a competent barista (ex. someone working as a barista for 6 months or more). Successful candidates should be able to dial in a brew recipe, make a full range of drinks with quality & speed, as well as understand the basic requirements for customer service & maintenance.

Introduction to Coffee & Barista Foundation are recommended (but not mandatory) pre-requisite modules.

 

Barista Skills Professional

Designed to test advanced skills & detailed knowledge of the science behind processes used, expected from a professional barista (ex. someone working as a barista for 12 months or more, with some management responsibilities). Successful candidates should have a detailed understanding of their ingredients & of the techniques available to maximise the quality of the drinks made. They should be able to manage the skills of others, to produce quality drinks, & provide excellent customer service.

 

Brewing Foundation

Designed to introduce the novice to the core skills & equipment required to produce great brewed coffee.

 

Brewing Intermediate

Designed to introduce the intermediate into the core skills and equipment required to produce great brewed coffee and understand how to chart different brew styles. Ideally candidates should hold a general understanding of brewing and grinder coffee for all brewing methods.
